The California Milk Advisory Board (CMAB) is celebrating culinary innovation in carry out and delivery with a new cooking competition – CADairy2Go. This competition leverages the trends in menus for off premise dining that emerged during the last year as the foodservice industry rose to meet consumer demands. To-goDairy is an essential ingredient for bringing these menu innovations to life and provide the flavor and flexibility to any style of cooking – from plant-forward to comfort and everything in between.
Twelve professional chefs from foodservice venues including major restaurant chains and independent operators to broadline distributors, food trucks and ghost kitchens across the country will compete by developing “to-go” dishes using California dairy in two categories: CalMex and Cheese&Mac. Candidate selection will occur in May with finalists announced in June.
Two finalists from each category will be selected to travel to Napa to compete in a final cooking competition at the Culinary Institute of America on July 28. The final cook-off will be captured in a live broadcast that will be broadcast in celebration of the chefs and their creations.
